A kicking way to eat super healthy grapefruit

Avocado and pink grapefruit salad


2 pink grapefruits

1 ripe avocado

1/2 tsp honey

1 lime, juiced

2 tsp olive oil

salt and black pepper to taste

1 Tbsp finely chopped fresh coriander


Using a sharp knife, cut off the tops and bottoms of the grapefruits. Remove the peel and pith in strips from the top to the bottom. Slice grapefruit into disks. Cut the avocado in half, remove the pip and peel it. Slice lengthwise into eight pieces. Arrange the fruit in a serving dish.

Whisk together the honey, lime juice, olive oil and salt and pepper and pour over the salad. Sprinkle the coriander over and you’re done.
